Coffee is usually an afterthought when added to beer... so instead we brewed a beer with coffee in mind! Collaborating with Monogram Coffee, we designed a very neutral blonde ale and then dosed it with brewhouse-brewed hyper strong coffee after fermentation to lock in the origin of the bean we chose - natural-processed ARDI from Ethiopia. This is an ongoing collaboration with Monogram that will rotate new and exciting coffees through OT Brewing Co. and into our beers.

Our second collaboration with Monogram Coffee brewed for Hopwired Festival 2019 features the fully natural-processed Tibebu Roba from Ethiopia. Natural Java begins as a blonde ale that gets dosed with brewhouse-brewed coffee after primary fermentation. Expect notes of blueberry cheesecake with extra crust!!

Our latest seasonal offering, Schusser Amber Lager, is a malt-forward interpretation of a German Zwickelbier. "Schusser" is a skiing term for someone that goes straight downhill without stopping; with notes of stewed dark fruit and a hint of smoke, Schusser Amber Lager is lightly hopped, gently lagered, and fit for sessioning straight through fall and clear into winter.

Our first anniversary beer celebrates two things we love here at O.T.-- hops and basketball! This single hop "super" pale ale was brewed with a hop new to us: Waimea from New Zealand. We kept the alcohol closer to that of a pale ale but dry hopped it like an IPA, like a perfect jump shot from the MVP of Canada's first NBA champions. We get notes of papaya creamsicle, preserved lemon, Froot Loops, and Kaimanua forest.

A mid-strength imperial stout featuring the largest and most complex grain bill to ever enter the O.T. mash tun, a three-hour boil, a significant hop drop in the whirlpool, and a conservative addition of whole Tahitian vanilla beans after fermentation to tie it all together. We get notes of milk chocolate-covered raisins, soft black liquorice, and mellow vanilla cola poking through a chewy, creamy body with refined Columbus hop character. Drink fresh or cellar away!

Our take on a "milkshake" IPA (minus the milk)-- we used lots of oats instead of lactose to contribute a creamy body. With guava added at high krausen to ensure dryness, we let Ghost Runner nap on a bunch of whole Tahitian vanilla beans after being dry hopped with a bit of Citra for good measure. Dig its summery sherbet-like character while considering sharing one with the vegan in your life!

A special edition of Flagstick Hazy Pale Ale dry-hopped with a pleasant amount of Galaxy hops. Tasting notes are similar to the original base beer but we also get lots of the candied peach and passionfruit character that Galaxy is known for.

Bier Von Der Fels is a dry hopped sour lager brewed in collaboration with our friends at Bar Von Der Fels. Inspired by the great white wines of Burgundy, we tried to emulate the minerality, acidity, aroma, and fruit structure that are found in those wines. Dry hopped with Hallertau Blanc and lagered slowly to our satisfaction, Bier Von Der Fels has all the complexity and flavour of a "white Burg" while remaining very drinkable at 4.4% ABV-- the perfect pairing for a picnic or settling in for a few amazing dishes at Bar Von Der Fels.

Our twist on a classic Belgian Witbier-- mashed with 50% raw wheat plus chamomile, coriander, & orange peel in the kettle. Then we "dry hopped" it with Middle eastern black (loomi) limes after fermentation... creamy with a hint of tartness and salinity, we get notes of lemon-lime Gatorade, sea breeze, and childhood powdered iced tea mix.

A simple, traditional Berliner-style Weisse with cherries added during high krausen. Dig some cherry turnover & cinnamon heart vibes on the nose followed by a wave of sour cherry candies and rustic Provençal rosé on the palate.

A collaboration between O.T. Brewing Company and Model Milk that fuses brewing and culinary creativity... this project began by inoculating wheat-based stout wort with lactobacillus cultured on rhubarb stalks in the Model Milk kitchen. Before the end of fermentation, we added 60kg of reduced Alberta-grown Hutterite raspberries to the beer. The result is a tart, light-bodied session stout with plenty of jammy, seedy raspberry character that is extremely drinkable and food-friendly.

Ape index is the measure of a person's arm span against their height-- Ape Index Barleywine is the measure of how far we could push the brewhouse here at O.T.! We maxed the mash tun with hundreds of kilos of choice Alberta malted barley before boiling the wort for six (long) hours with lots of fresh Columbus and Cascade. This beer has a huge, syrupy body with notes of candied marmalade, Christmas tree, and a bit of sticky toffee pudding.

This collaboration between O.T. and Paddy's was inspired by Blake and Dan's respective trips to Central Europe this spring where they both drank high volumes of a certain golden Czech pilsner. We trucked in two totes of reverse osmosis water from Paddy's, tried our hand at decocting Czech pilsner malt, hopped it with lots of Czech Saaz, fermented it with traditional Czech yeast, and lagered it as long as we could before it ended up in your hand. Na Zdraví!

A traditional English-style pub ale brewed with sulfate-rich water, toasty Canadian pale malt, Fuggles & East Kent Goldings hops from the United Kingdom, and our house British ale yeast. Designed to be enjoyed one pint after another within the walls of a cozy pub.

Our American Mild takes cues from the dark and malty English session ales of yesteryear and updates them slightly with the use of Cascade and Columbus hops. Featuring a balanced malt/hop profile with notes of well-done toast, Pacific Northwest pine trees, and a last sip of espresso, it's the perfect session beer for ushering in the cooler seasons.
