Dark and forboding but light and very drinkable, an education in the chocolate/coffee/toasted malts for those who avoid darker beers

Pilsner   (3.47/5)

This is not your traditional Pilsner but it’s pretty darn close. Using 100% German Pilsner malt plus a soft water profile creates a clean, easy drinking beer, but we weren’t done there. Instead of using traditional noble hops that are synonymous with this style we decided to experiment. Using a hop from New Zealand lends us the typical noble hop character plus additional “fruity” tones such as lemon and lime.

IPA   (3.54/5)

This American IPA is tropical fruit forward beer with subtle but complex malt flavours. Fruity hop aromas include citrus, papaya and mango with subtle pine notes throughout. The malt bill contributes notes of breadiness, toast and biscuit paired with a dry, refreshing finish.

NEIPA   (3.66/5)

For our first ever collaboration beer we didn’t search far for a collaborator. We got together with our amazing neighbours and friends at Banded Peak. Those guys know how to make amazing hoppy beers so we chose to make a NEIPA (New England or North-East IPA). The idea was to make a juicy, fruity, hazy and smooth IPA with tons of hop flavor and aroma. Loads of Amarillo, Citra, Mosaic and Azacca were added to this beer including a double dry hop. This resulted in a potent bomb of hops with a pleasant mouthfeel and smooth bitterness. Get it while it’s fresh, we doubt this one will last long!

Cascadian Dark   (3.59/5)

A Cascadian Dark Ale, India Black Ale or Black IPA is a dark, moderately roasty ale with lots of hop flavours and aromas. The malt profile is a mixture of chocolate, dark fruit, coffee and hints of toasted bread. A combination of Mosaic, Cascade and El Dorado hops give this beer an assertive hop profile full of pine, dankness, citrus and earthiness. Tying this beer together is a creamy mouthfeel and moderately sweet finish to balance the astringency of the roasted malts and bitterness of the hops. This is winter comfort in a glass perfect for fireside chats, outdoor rinks, après ski and of course barbecue!!

Amarillo By Morning   (3.7/5)

Brewed in collaboration by Banded Peak Brewing, Paddy's Barbecue and Brewery and Canada Malting. The beer was brewed using Canada Malting's new Alberta Heritage Select malt. This beer is a salted sour ale fermented with peach puree and dry hopped with Amarillo. Tart, fruity and refreshing.

Red Ale   (3.52/5)

One of our brewer’s specialties, this hop-forward, North American-style Red Ale features a hefty measure of El Dorado and Enigma which provide tropical, stone fruit and even cherry, red berry and candy character. The chewy malt bill provides a counter-point, adding some complexity but maintaining a crisp finish.

Sour Cherry Stout   (3.67/5)

Happy birthday to us! This special 1st anniversary beer is a kettle soured stout with sweet cherries added during fermentation. It’s a complex mix of chocolate, cherry and tartness. Dark colour with a hint of cherry red and a beautiful pink head. Enjoy and thanks for all the support during our first year!

Dry Irish Stout   (3.53/5)

It’s that time of year where we celebrate St. Paddy, the patron saint of barbecue and beer! Only joking, but it kinda works! To help you celebrate this year we made a real crushable Dry Irish Stout! At 3.6% you can drink this dark beauty all night and keep “yer wits about ya.” This velvety smooth stout has hints of chocolate and coffee balanced with traditional English hops. Carbonation is kept low to preserve the creamy mouthfeel so get after it…. responsibly.

Brown Ale V1   (3.6/5)

This American Brown Ale is rich, crisp and refreshing. Malt notes of brown bread, biscuit, caramel and dark fruit coat the mouth in decadent delight! Galena hops are used for bittering and Cascade is added late in the boil to provide hints of citrus, pine and floral. The amber/copper/brown colour and clarity is so beautiful you could stare at it forever. But don’t forget to drink it too!

Wit   (3.35/5)

This Belgian wheat beer is refreshing, complex and elegant. Orange peel, coriander and chamomile additions pair with the wheat forward malt bill and the complex yeast derived flavours.

Alberta SMASH   (3.41/5)

A SMASH beer is a beer that uses a Single Malt And Single Hop in the brewing process. For our first SMASH beer brewed at Paddy’s we decided to celebrate a couple of amazing companies based in Alberta. The malt we decided to use was sourced from Red Shed Malting in Penhold, AB. The malt we selected is called Kananaskis and is similar to a light Munich malt. The malt flavor in this beer is absolutely delightful with notes of freshly baked bread, bread crust and cracker. To balance the beer and contribute hop flavor and aroma we contacted Northern Hop Girls. We selected whole leaf challenger hops, which resulted in earthy, spicy and cedar notes. Thanks so much to these two great companies that help make the Alberta beer scene even more amazing

A delicious, silky smooth milk stout aged on 12 pounds of Rosso Tipping Point coffee and 3.5 lbs of Ecuadorian Cocoa nibs. Rich, chocolate, heaven.

Wet Hop IPA   (3.63/5)

Three years ago, before Paddy’s even existed a number cascade hop rhizomes were planted. This year was the first year of a bountiful harvest and thus justified our first Wet Hop IPA. 8 kilograms of fresh, wet cascade hops were used in this beer on the same day that they were picked. Full of characteristic citrus and pine flavours but also a significant “green” hop flavour that wet hop beers are known for. Get it while its fresh!

ISA V2   (3.53/5)

The next version of our sessionable IPA or ISA is here! Version 2 has a similar malt bill to the first version but with different hops. This batch features a health dose of Citra and Amarillo hops leading to orange, grapefruit, lemon and floral flavor bombs. This beer is super dry and crushable with just the right amount of bitterness. Enjoy it in the sun or in a snowstorm, it is still April after all!

IPA V3 - OEIPA   (3.53/5)

New England IPA’s are all the rage right now but don’t forget about “Old England IPA’s (OEIPA).” This English IPA is maltier and darker than it’s American counterpart. It also has a lower IBU and stronger ester notes from the English Ale yeast. Marris Otter malt and Fuggles and EKG hops give it a noticeable “English” flavor with Cascade and Centennial hops adding some citrus and pine.

This traditional German sour ale features Himalayan pink sea salt and coriander added during the boil. It’s crisp, sour, slightly salty and features some delicious citrus flavours of lemon and grapefruit.
